Size of the Data partition depends on the size of the Database. As a guide allow for 6 x the Database size to account for backups and expansion of the files during upgrades (i.e. for a 10 Gb Database allow between 60 Gb and 100 Gb).
A separate disk for Log files (SQL and Web) improves performance but this isn’t necessary.
As a guide, a top of the range single server configuration would probably be:

OS - 2 disks mirrored or RAID 5 on 3 disks if preferred

Logs - 2 disks for log files again mirrored with good write speed performance

Data - 4 disks in RAID 10 with good read and write performance
